Grilled (Broiled) Chicken Recipe
(Yakitori)

Japanese Recipes


This is one of the most popular of all Japanese grilled (broiled) dishes. A charcoal grill (broiler) imparts a flavor which is unsurpassed, but the dish can be cooked under an ordinary grill (broiler). Use bamboo skewers if possible; these should be soaked in water for about 15 minutes before using.

Ingredients:

1 kg
1 bunch

Marinade:

175 ml
50 g/2 oz
175 ml
 

To serve: 

boned chicken, cut into chunks
spring onions, cut into 5 cm/2 inch lengths
green peppers, cored, seeded and cut into 5



shoyu
sugar
sake
pinch of monosodium glutamate (optional)


pinch of powdered sansho
 pepper

Method:

  1. Thread the chicken, spring onions (scallions) and green peppers alternately on 4 skewers. Mix together the marinade ingredients and brush over the skewers. Leave to marinate for 30 minutes, basting occasionally.

  2. Grill (broil) for 3 minutes, then dip the skewers in the marinade again, turn and grill (broil) for 2 minutes: do not overcook.

  3. Serve hot with a pinch of sansho pepper.
