Pork on Skewers (Buta Teriyaki)Recipe
Japanese Recipes

Pork marinated in Teriyaki sauce has an exquisite flavor, especially if cooked over a charcoal grill (broiler). If this is not available, an ordinary grill (broiler) may be used, although the flavor will not be quite so good.

If liked, spring onions (scallions), mushroom caps and strips of green pepper can be added to the skewers, alternating with the pork. use bamboo skewers if possible : these should be soaked in water for 15 minutes before use.

As a variation, chicken, beef, prawns (shrimp) or fish may be used instead of pork.

Ingredients

1 kg

5 tbsp
4 tbsp
4 tbsp

pork fillet, thinly sliced
grated fresh root ginger
medium onion, peeled and finely chopped
monosodium glutamate (optional)
shoyu
sugar
sake

Method:

  1. Put all the ingredients in a bowl, mix well, then leave to marinate for at least 1 hour.

  2. Thread the pork on 4 skewers, reserving the marinade. Grill (boil) for 3 minutes on each side, basting frequently with the marinade. Serve immediately.

Serves 4
