Prawn salad served in a piquant dressing.

Ingredients:

1/2
375 g
1/4 cup
1 tbsp
1 tbsp
1 tsp
1 tbsp

telegraph cucumber
medium raw prawns
rice vinegar
caster sugar
soy sauce
finely grated fresh ginger
toasted sesame seeds

Method:

  1. Halve cucumber lengthways, remove any seeds and remove skin. Cut flesh into thin slices, sprinkle thoroughly with salt and set aside for 5 minutes. Rinse to remove salt; pat dry with paper towels.

  2. Place the prawns in a pan of lightly salted boiling water and simmer for 2 minutes, or until just cooked. Rinse with cool water and then peel and devein them, leaving tails intact.

  3. Place the vinegar, sugar, soy sauce and ginger in a large bowl and stir until the sugar dissolves. Add the prawns and cucumber and marinate 1 hour.

  4. Arrange on serving plates, sprinkle with sesame seeds and serve.

Notes: These raw or lightly cooked foods, marinated and served in a vinegared dressing, are a delicious appetizer.
