Traditional Grater

Grater:

Traditional grater, used for preparing ginger, galangal and daikon (mooli), are made from wood or bamboo, but a metal cheese or coconut grater makes a satisfactory substitute.

Stone Pestle and Mortar

Mortar and pestle:

Oriental cooks prefer granite or stone mortars and pestles, since these have rough surfaces which help to grip the ingredients that are being chopped or pounded. Bigger, flat-bowled mortars are good for making spice pastes that contain large amounts of fresh spices, onion, herbs and garlic

Traditional mortarSpice mill:

If you are going to grind a lot of spices, a spice mill will prove useful. An electric coffee grinder works well for this purpose, but it is a good idea to reserve the mill for spices, unless you like to have your coffee flavored with cardamom or cloves.
