Binatok
(Pea and Rice Pancakes with Vegetables)

This dish is a cross between a pizza and a pancake (crepe). It should be made with ground mung bean ; if these are not available, use split peas instead.

Ingredients

Sauce:

mung bean
short-grain rice
plain flour
eggs, beaten
water
vegetable oil
sesame oil
soy sauce
carrot, peeled and finely chopped
large onion, peeled and fined chopped
spring onions, green part only, finely chopped
small red pepper, cored, seeded an thinly sliced
ginger, finely grated
garlic, finely chopped
minced beef


spring onions, very finely chopped
Korean soy sauce
water
sesame oil

 

Method:

  1. Put the beans and rice in bowl, cover with cold water and bring to boil. Cook for 25 minutes, until the beans are very soft.
  2. Transfer the beans and any remaining liquid to an electric blender, add flour, egg and work to a thick, smooth batter.
  3. Pour batter into a bowl; stir in vegetables, ginger, garlic, minced beef and soy sauce.
  4. Heat a small omelet pan (about 15 cm/6 inches in diameter) over medium heat and, when hot, brush with a little vegetable oil and sesame oil. Pour in 2 tablespoons of batter; cook for 3 minutes until the edges begin to curl. Turn the binatok over carefully and fry the other side for 3 minutes until golden brown underneath. Transfer to a warmed serving dish and keep hot while cooking the remaining ingredients in the same way.
  5. To make Sauce: Combine spring onions, soy sauce, water and oil in a bowl; mix well.
  6. Serve hot with sauce handed separately is a dip.

Serves 4-6, makes ~ 15
