Spiced Raw Beef
(Yuk Kwe)

This is the Korean version of Steak Tartare. The egg yolk is broken
at the table and mixed with the beef, pear and cucumber. Use either
chopsticks or a fork for mixing and eating. If partially frozen beef
is used, it will be easier to obtain very thin slices.

Beef fillet or topside
sugar
sesame seeds
sesame seed oil
crushed garlic
monosodium glutamate
salt
egg yolks (optional)
small hard pears, peeled,
cored and sliced into matchstick strips
diagonal slices of cucumber, cut into matchstick strips
parsley sprigs
carrot (optional)

Method:

Cut the meat into very thin slices no more than 3 mm/1/8
inch thick, then cut the slices into matchstick strip. Place in
a bowl with the remaining ingredients, except the egg yolks. Mix
together, using the hands (their warmth will thaw the meat),
then divide into 4 portions.

Divide the pear and cucumber strips equally between 4
individual serving plates, arranging them in separate piles.
Place the meat mixture on top. If using egg yolks, mould the
mixture into a neat shape and put an egg yolk in each hollow.
Garnish with parsley sprigs and carrot "flower", if liked. Serve
raw.
