Ingredients

chicken, weighing 1-1.25 kg
water
fish sauce
sugar
pinch of monosodium glutamate
lime of juice
spring onions, chopped
shredded culantro
red chili, sliced

Method:

  1. Put the chicken and water in a large pan and bring to boil. Boil for 20 minutes or until the chicken is cooked. Remove the chicken from the pan and tear the meat from the bones in bite-sized pieces. Return the meat and bones to the pan and bring back to the boil. Boil for 5 minutes, then remove from the heat.

  2. Put the fish sauce, sugar, monosodium glutamate (msg) and lime juice in a warmed soup tureen. Pour the hot soup into the tureen and stir well, then sprinkle over the spring onions (scallions), culantro and chili. Serve hot with rice as part of a family dinner.

Serves 4
