Stir-Fried Chicken with Ginger
(Sach Mon Chha Khnhei)

Ingredients

piece of fresh root ginger, peeled and shredded
pork fat or vegetable oil
garlic cloves, peeled and chopped
chicken thighs, chopped into 2.5 cm/1 inch squares
fish sauce
sugar
water
spring onions, cut into 5 cm/2 inch pieces
salt

 

Method:

  1. Sprinkle the ginger with a little salt, leave to stand for a few minutes, then squeeze and discard the liquid. Rinse the ginger with water and squeeze out the liquid again.

  2. Heat the pork fat or oil in a frying pan (skillet). Add the garlic and stir-fry until lightly browned. Add the ginger and stir-fry for 1 minute, then add the chicken. Stir in the remaining ingredients, except the spring onions (scallions), then cover and cook over moderate heat for 10 minutes or until the chicken is completely cooked. Stir in the spring onions (scallions)

  3. Transfer to a serving dish and garnish with coriander or parsley. Serve hot with rice as part of a family dinner.
