Glutinous (Sweet) Rice
 Laos Recipes


In  Laos, rice is always served in the bamboo basket in which it has been steamed. In the West, however, it can be steamed by putting a layer of cheesecloth (muslin) on one of the layer of an oriental aluminum steamer, and placing the soaked glutinous (sweet) rice on the cheesecloth (muslin). For this method of cooking rice, no measurements are necessary: every cup of glutinous (sweet) rice doubles in volume when cooked.

 

Method:
Soak the rice in water to cover for at least 6 hours, then drain. Bring water to the boil in the lower level of a steamer, making sure that the water does not touch the steaming level. Place the rack containing the rice on top of the boiling water, then cover and steam for about 15 minutes until the rice looks clear and is soft to the touch. The longer the soaking period, the shorter the cooking time.
