Sour Carrot
(Tam Som)

 Laos Recipes


Tam Som appears as an appetizer at all social occasions. It has an amalgam of flavors - sour, salty, sweet and very hot. If pock stomach cannot be obtained, it may be omitted.


Ingredients

225 g /8 oz

pork stomach
garlic cloves, peeled 
dried red chilies
tomatoes
monosodium glutamate
fish sauce
medium carrots, peeled and shredded

 

Method:

  1. Put the pork stomach in a pan, cover with water and boil for about 30 minutes.

  2. Meanwhile, pound the garlic, chilies, tomatoes and monosodium glutamate (msg) in a mortar. Stir in the fish sauce.

  3. Place the shredded carrot on a serving dish and pour over the sauce. Drain the pork stomach, slice thinly and arrange on top of the salad. Mix well with chopsticks just before serving. Serve cold.
