Sour Carrot

Tam Som appears as an appetizer at all social occasions. It has an
amalgam of flavors - sour, salty, sweet and very hot. If pock
stomach cannot be obtained, it may be omitted.
Ingredients

pork stomach
garlic cloves, peeled
dried red chilies
tomatoes
monosodium glutamate
fish sauce
medium carrots, peeled and shredded

Method:

Put the pork stomach in a pan, cover with water and boil for
about 30 minutes.

Meanwhile, pound the garlic, chilies, tomatoes and
monosodium glutamate (msg) in a mortar. Stir in the fish sauce.

Place the shredded carrot on a serving dish and pour over
the sauce. Drain the pork stomach, slice thinly and arrange on
top of the salad. Mix well with chopsticks just before serving.
Serve cold.
