Salted Turnip Omelet Recipe (Chye Poh Nng)

Ingredients

350 g
150 g
 
1/2 tsp
1/2 tsp
1/2 tsp

medium-sized eggs
chopped salted turnip (chye poh), soaked
small shrimp, shelled
salt and white pepper
sesame oil
ikan bilis stock
vegetable oil

 

Method:

  1. Soak salted turnip for 30 minutes, then drain.

  2. Mix all the eggs, salted turnip and shrimp in a mixing bowl with the sesame oil, ikan bilis stock and a pinch of salt and two shake of pepper.

  3. Heat vegetable oil and grease a deep frying pan.

  4. When pan is heated, pour in mixture and smoothen over the top.

  5. Simmer on very low heat, covered. This helps to cook the centre of the omelet.

  6. Cook until the egg mixture is firm and separates from the pan.

  7. When underside is golden brown, flip over and continue cooking till brown.
