Deep-fried Belacan Spare-Ribs Recipe

Ingredients

600 g
11/2 tbsp

Seasoning:

1 1/2 tbsp
1 tbsp
11/2 tbsp
1 tsp
11/2 tbsp

spare-ribs
tapioca flour


ginger juice
sugar or to taste
belacan paste or shrimp paste
sesame oil
Shao Hsing Hua Tiau cooking wine
cloves garlic, pounded 

Method:

  1. Chop the spare-ribs into bite-sized pieces. Combine seasoning ingredients in a mixing bowl.

  2. Marinate spare-ribs in the seasoning and set aside for 1-2 hours or, preferably, overnight. Just before deep-frying, add tapioca flour to the marinated spare-ribs and mix well.

  3. Heat enough oil in a wok until just hot. Deep-fry marinated spare-ribs until golden. Drain from oil and serve immediately.
