Ingredients:

meaty spare ribs
salted black beans, chopped
garlic, finely chopped
chopped ginger
fresh red chili, finely chopped
light soy sauce
dark soy sauce
brown sugar
water
vegetable oil
large onion, chopped
green capsicum, chopped |

Directions:

Cut ribs into 4
cm pieces; place in ovenproof dish. Scatter on
black beans, garlic, ginger and chili; add soy
sauces, sugar and water.

Cover the dish and
bake in preheated moderate oven 180 oC
or place in a steamer and cook over gently
simmering water for 1 1/2 hours.

Heat oil
in wok, stir-fry capsicum and onion until
softened and fragrant. Add the pork ribs and
juices and cook for 5 minutes. Serve hot with
rice.
