Black Bean Noodles with Bean Curd Recipe

Nutritious and healthy as it undoubtedly is, bean curd will never win
any awards for flavor, which is why combining it with the spicy and
aromatic black bean sauce works so well.
Ingredients

dried rice stick noodles
vegetable oil
bean curd, diced
piece root ginger, peeled and finely chopped
cloves garlic, crushed
green pepper, diced
red pepper, diced
yellow pepper, diced
spring onion, chopped
black bean sauce
Chinese light soy sauce
Chinese rice wine or dry sherry
caster sugar

Method:

Soak the noodles in warm water for 2-5 minutes,
depending on the instructions on the packet. Rinse under cold water
and drain.

Heat 3 tbsp of the oil in a wok or frying pan, and
fry the bean curd until golden brown. Stir in the ginger and garlic.
Add the peppers and spring onions and stir-fry for 1-2 minutes.

Add the noodles and the remaining oil and
ingredients. Stir until the noodles are well coated with sauce.
Divide the noodles among four plates and serve immediately.
