Classic Japanese Cold Noodles Recipe

To eat this dish, place some of the garnish into your Dipping Broth,
then taking some noodles from the communal plate with your chopsticks,
dip them into the broth and enjoy!
Ingredients

450 g/1 lb
700 ml/11/4 pt
Garnish:
1 sheet

somen noodles
Dipping Broth, chilled
Ice cubes
seaweed paper, cut into fine strips
spring onion, chopped
Japanese horseradish
basil leaves, shredded

Method:

Bring a large pan of water to the boil and add
the noodles. When the water returns to the boil, pour in a small
cupful of cold water to reduce the temperature. When the water comes
back to the boil, remove the noodles immediately. drain and rinse
under cold water, then drain again.

Place the ice cubes on a large serving plate and top
with the noodles. Pour the chilled broth into four small bowls, and
serve the garnishes separately.
