Light Prawn and Noodle Soup Recipe

This is a very light and delicious soup. to make it a little more substantial, prawn balls can be added. Ready made prawn or fish ball are sold in vacuum packed plastic bag in Chinese food shops.


Ingredients

Prawn balls:

Vegetable Stock
button mushrooms, sliced
cucumber, peeled and cut into matchsticks
bean thread vermicelli noodles
fresh prawns, cooked and shelled
large cooked prawn, shells intact
fish sauce

 

cooked prawns, shelled, de-veined and mashed
small hard-boiled egg, mashed
small onion, very finely chopped
egg, beaten
salt and pepper

 

Method:

  1. Pour the stock into a pan and add the mushrooms. Set aside.

  2. Arrange the cucumbers and prawns on serving plates. Soak the noodles in boiled water, slightly cooled, for 5 minutes. Drain and divide between four bowls. Meanwhile, bring the stock and mushrooms to the boil and then simmer, adding the prawn balls (see below).

  3. To eat - top the noodles with cucumber and prawns, and pour over the hot stock. Spoon in fish sauce for taste and garnish with an unshelled prawn.

  4. To make prawn balls, mix the ingredients together in a bowl with your hands. Shape the mixture into small balls, and drop into a simmering broth or stock for 5 minutes to cook.
