Chinese Spinach with Dried and

For steaming dried scallops:
1 cup

1 sprig

Sauce:
165 g
2 tsp
dried scallops
fresh scallops
Chinese spinach
cloves garlic (grated)
water
ginger
spring onion
oil
liquid from steaming dried scallops
caltrop starch
Method:
Wash dried scallops. Soak in 1 cup of water for 2 hours. Steam
with ginger, spring onion and oil for 25 minutes. Remove dried
scallops. Reserve the liquid from steaming dried scallops.
Wash fresh scallops and scald.
Stir fry garlic with oil until fragrant. Add water and bring to
the boil. Add Chinese spinach and blanch. Remove and transfer to a
plate.
Bring sauce to boil. Add dried and fresh scallops and mix well.
Place dried and fresh scallops on top of Chinese spinach. Serve.
