Chinese Vegetables with Mushrooms and Oyster Sauce Recipe

Ingredients:

1 bunch

Chinese green vegetables (bok choy, choy sum, gai larn)
dried Chinese black mushrooms
vegetable oil
oyster sauce

 

Directions:

  1. Thoroughly wash vegetables and drain well. Cut off thick stalks from greens and cut the leaves and stalks into strips.

  2. Soaked mushrooms for 20 minutes, trim stems and squeeze water from caps. Cut caps into thin slices. Simmer in lightly salted water for 5 minutes then drain.

  3. Plunge the vegetable stems into boiling water to cook for 1-2 minutes. Remove, then briefly blanch the leafy parts and drain well.

  4. Toss vegetables and mushrooms in oil over moderate heat till well coated. Serve dressed with oyster sauce.
