mutton, cut into pieces
ghee
plain natural yoghurt
cube stock
black soy sauce



black pepper, roasted and grinded coarsely
cumin powder
cardamoms
cloves
garlic, pounded finely
ginger, pounded finely



cinnamon stick
big onions
springs curry leaves
mixed spices 

Method:

  1. Mix mutton with A and marinate for about 1 hour. Put into a pot, add 3 cups water and bring to boil. Lower the heat and leave to simmer till mutton is tender and dry.

  2. Melt ghee in the wok, sauté B till grant. Add mutton, yoghurt and mix well. Season with chicken stock and add black soy sauce to give color.

  3. Continue frying until mutton is well coated with spices and dry.

  4. Serve with rice, bread or puree.
