Coconut Curried Fish Recipe
 Malaysian Recipes

 

 

 

 

Ingredients:

7 cloves
2.5 cm/ 1 in piece
1
4 tbsp

1/2 tsp
400 ml/ 14 fl oz/ 1 3/4 cups

450 g/ 1 lb

 

garlic, chopped
fresh root ginger, chopped
large fresh red chili, cored, seeded and chopped
vegetable oil
large onion, quartered and sliced
ground cumin
ground turmeric
coconut milk
salt
firm white fish fillet , cod or halibut, cut into 5 cm/ 2 in pieces
coriander sprigs and lime wedges, to garnish

Method:

  1. Put garlic, ginger and chili in a blender. Add 150 ml/ 5 fl oz/ 2/3 cup water. Mix until smooth.

  2. Heat oil in a wok or sauté pan over medium heat, add onion and fry 5-7 minutes until beginning to color. Add cumin and turmeric and stir for 30 seconds. Stir in garlic mixture. Cook, stirring, for about 2 minutes until liquid has evaporated.

  3. Pour coconut milk into pan. Bring to a boil and bubble until sauce is reduced by half. Add salt to taste. Add fish. Spoon sauce over fish so it is covered. Simmer and cook gently for 4-6 minutes until just flakes. Garnish with coriander sprigs and lime wedges. Serve with rice.
