Marinated Grilled Fish Recipe
 Malaysian Recipes

 

 

 

 

Ingredients:

flat fish such as plaice or dabs, each weighing about 350g / 12 oz
large cloves garlic, cut into fine slivers
fresh root ginger, cut into fine slivers
groundnut oil
light soy sauce
sesame oil
rice wine
spring onions (scallions), thinly sliced

Method:

  1. With the point of a sharp knife, cut 5 diagonal slashes, herringbone style, in both sides of each fish. Place in a shallow dish.

  2. Put garlic, ginger, groundnut oil, soy sauce, sesame oil and rice wine in a small saucepan. Heat to simmering point and pour over fish, spooning marinade into slashes. Refrigerate for at least 1 hour, turning fish every 30 minutes.

  3. Preheat grill (broiler). Lift fish from marinade and grill (broil), pale skin side down, for 3 minutes. Turn carefully and grill (broil) for a further 1-2 minutes depending on thickness of fish. Grill (broil) in batches if necessary, keeping grilled (broiled) fish warm. Reheat any remaining marinade and pour over fish. Scatter spring onions (scallions) over and serve.
