Spiced Fish in Banana Leaves Recipe
 Malaysian Recipes

 

 

 

 

Ingredients:

600 g/ 1 1/4 lb

 

Spice paste:
8
3 cloves
2
2.5 cm/ 1 in piece
4
1/2 tsp
2 tsp
2 tsp
1/4 tsp

 

white fish fillets
banana leaves or aluminum foil
oil for brushing


shallots, chopped
garlic, smashed
fresh red chilies, cored, seeded and chopped
fresh root ginger, chopped
candlenuts or cashew nuts
tamarind paste
ground coriander
ground cumin
ground turmeric
salt

Method:

  1. For spice paste: Put all ingredients in a blender and mix to a paste.

  2. Cut fish into 10x5cm (4x2 in) pieces 1 cm (1/2 in) thick. Coat top of each piece thickly with spice paste. If using banana leaves, hold them over a flame to soften. Oil leaves thoroughly and cut into pieces to wrap around pieces of fish (or do this with foil). Secure with wooden cocktail sticks or toothpicks.

  3. Preheat barbecue or grill (broiler). Cook fish parcels for 8-10 minutes, turning halfway through. Serve with lime wedges, and with banana leaf or foil partially torn away to reveal fish.
