Spiced Pork Shank Recipe

Ingredients
1 kg

Spices:

1 pc (15 g)
2 stalks

Seasoning sauce:

1 1/2 cups
3 cups
4 tbsp
75 g
2 tbsp
  

Pork shank, washed



ginger
spring onion
star anise
cinnamon stick
cloves
liquorice (Kam Chor)
preserved mandarin peel
Szechuan peppercorn (Fah Chiew)
Dried chilies (optional)

 

soy sauce
water
Shao Shin wine
sugar
dark soy sauce

 

Method:

  1. Put Pork shank into a pot of boiling water and boil for 5 minutes. Remove and rinse in cold water. Drain.

  2. Put spices, seasoning sauce into a pot and bring to boil. Add Pork shank and bring to boil. Lower fire and continue to cook till Pork is tender (about 2-3 hours.)

  3. Leave Pork shank in the sauce for 1 day so that the meat can absorb all the flavor of the spices.

  4. Remove Pork shank, cut into slices and serve

 

Tips: This spiced sauce can also be used for cooking other types of meat, e.g. beef shank, chicken, etc. The remaining sauce can be kept in the bottle and store in the fridge for later use.
