Spiced Rice Recipe
 Malaysian Recipes

 

 

 

 

Ingredients:

5 cm/ 2 in
1 tbsp

2 cm/ 3/4 in piece

225 g/8 oz
1 tsp
1 tbsp
2 tbsp

 

cinnamon stick
coriander seeds, lightly crushed seeds from 1 green cardamom pod, lightly crushed
star anise
small onion, chopped
garlic cloves, chopped
fresh root ginger, chopped
vegetable oil
long grain rice, rinsed
dark soy sauce
candlenuts nuts or cashew nuts
raisins
 

Method:

  1. Put cinnamon, coriander and cardamom seeds and star anise in a saucepan.

  2. Add 850 ml water. Simmer uncovered until reduced to 450 ml. Set aside to cool. Put onion, garlic and ginger in a blender and mix to a paste, adding a little of spiced water if necessary. in a saucepan, heat oil over medium-high heat. add paste and fry for 3-4 minutes, stirring occasionally.

  3. Stir in rice. Strain in spiced water, add soy sauce and bring to a boil. stir, cover and simmer until rice is tender and liquid has been absorbed. add nuts and raisins and fluff up rice with chopsticks or a fork.

 

Serves 4 as a side dish.
