Wonton Soup Recipe

boneless, skinless chicken
lean pork
Chinese sausage
peeled prawns (shrimp)
onion, chopped
carrot, chopped
stick celery, chopped
water chestnuts
soy sauce
sesame oil
wonton wrappers
chicken stock
mange-tout
carrot, cut into fine strips

Method:

  1. Dice 1/4 of chicken, pork, sausage and prawns (shrimp). Set aside. Put remaining chicken, pork, sausage and prawns in a food processor. Add onion, carrot, celery, water chestnut, soy sauce and sesame oil. Process to a smooth paste.

  2. Spoon a little of the meat paste on to centre of each wonton wrapper. Lightly moisten edges and draw them together to make small packets.

  3. In a large saucepan , bring stock to a boil. Add wontons in batches. Return to a boil and simmer for 5 minutes. Add mange-tout, carrot strips and reserved meats and prawns. Boil and simmer for another 5 minutes.
