Crab Curry Recipe
Indonesian Selection - Microwave Cooking Recipes

 

Ingredients

(A)-to be grounded:

(B)- to be grounded:
1 tbsp

garnish:
medium sized crabs, remove all unwanted parts and cut body into 2 to 4 pieces
ginger, finely shredded
bitter gourd, cut lengthwise and remove seeds, then cut into thin slices
curry leaves
coconut milk
vegetable oil
salt to taste
grated coconut, roasted


roasted ketumber
roasted jintan manis
jintan puteh


peppercorns
turmeric
buah keras
garlic
small onion

coriander leaves

Method:

  1. Put crab into a microwave container and steam 4 minutes till half cooked and set aside.

  2. Scald bitter gourd with hot water, when cool, discard water and squeeze all juice out of gourd to get rid of the bitter flavor.

  3. Put oil in a large microwave container and add grounded ingredients B to fry on HIGH 5 minutes till fragrant.

  4. Add the grounded ingredients A with 3 tbsp coconut milk and fry on HIGH 3 minutes, stir twice during cooking.

  5. Add ginger, grated coconut and half of the remaining coconut milk. Continue to cook 2 minutes.

  6. When mixture boils, add the crab, bitter gourd and salt stirring well. Add the rest of the coconut milk and allow to boil on MEDIUM-HIGH 5 to 8 minutes till gravy thickens and reaches the consistency required.

  7. Garnish with coriander leaves and serve with plain rice.
