Double-Boiled Pig's Brain with Cuidium Officinale and Angelica Recipe

Ingredients:

Seasonings:
1 tbsp

 

cuidium officinale
angelica
pigs' brain, about 600 g
ginger


rice wine
a pinch of salt and pepper.

 

Method:

  1. Rinse and drain cuidium officinale and angelica.

  2. Soak pigs' brain in water. Remove blood vessels and tear off outer membrane. Put them in boiling water and microwave on HIGH (100%) for 1-2 minutes as scalding. Remove and drain well.

  3. Put pigs' brain, cuidium officinate, angelica, sliced ginger and rice wine in a tureen. Pour in some boiling water till 80% full. Seal well. Microwave on HIGH (100%) for 4-5 minutes. Then turn to SLOW COOK (LOW) to double-boil for 1 1/2 hour. Add in seasonings. Dish up and serve.
