Double-Boiled Pig's Brain with Cuidium Officinale
and Angelica Recipe Microwave Cooking

Seasonings:
1 tbsp
cuidium officinale
angelica
pigs' brain, about 600 g
ginger
rice wine
a pinch of salt and pepper.
Method:
Rinse and drain
cuidium officinale and angelica.
Soak pigs' brain in water. Remove
blood vessels and tear off outer membrane. Put
them in boiling water and microwave on HIGH
(100%) for 1-2 minutes as scalding. Remove and
drain well.
Put pigs' brain, cuidium
officinate, angelica, sliced ginger and rice
wine in a tureen. Pour in some boiling water
till 80% full. Seal well. Microwave on HIGH
(100%) for 4-5 minutes. Then turn to SLOW COOK
(LOW) to double-boil for 1 1/2 hour. Add in
seasonings. Dish up and serve.
