Double-Boiled Pigeon with Jinhua Ham and Black
Mushrooms Recipe Microwave Cooking

2 slices
Seasonings:
pigeon (about 450g)
black mushrooms
Jinhua ham
ginger
a pinch of salt and pepper.
Method:
Remove internal
organs from pigeon. Put it in boiling water and
microwave on HIGH (100%) for 30"- 1' as
scalding. Remove and drain well.
Soak black mushrooms till tender.
Trim ends. Rinse well.
Put pigeon, black mushrooms, ham
and ginger slices in a tureen. Pour in some
boiling water till 80% full. Seal well.
Microwave on HIGH (100%) for 4-5 minutes. Turn
to SLOW COOK (LOW) to double-boil for 2 hours.
Add in seasonings. Dish up and serve.
