Fried Rice in Pineapple Recipe (Khao Paad Supparod)
Thai Selection - Microwave Cooking Recipes

 

Ingredients
300 g

long grain rice
water for cooking
large pineapple
fresh prawns
crabmeat, shredded
Chinese sausage, sliced
garlic, chopped
fresh chilies, chopped
onions, chopped
fish sauce
light soy sauce
vegetable oil
crispy fried shallots
black pepper, grounded

Method:

  1. Boil rice on HIGH 12 minutes till three-quarter cooked and set aside.

  2. Cut pineapple in half lengthways and cut out flesh into small cubes.

  3. Shell and de-vein prawns and chop into small pieces.

  4. Heat oil in a microware ware for 1 minutes and add onions, garlic and chilies. Cook on HIGH 3 to 4 minutes till fragrant.

  5. Add prawns and cook on HIGH 3 minutes till prawns turn red.

  6. Add crabmeat and sausage. Cook on HIGH 1 min and blend thoroughly.

  7. Add the cooked rice, season with fish sauce, soy sauce and freshly ground black pepper. Mix well. Cook on HIGH 5 minutes till rice is fluffy and fully cooked.

  8. Stir in half the diced pineapple and cook on HIGH 1 min.

  9. When rice is ready, fill the pineapple shells with rice and sprinkle crispy fried shallots on top and garnish with the remaining pineapple cubes.

Serves 4
