Hot & Sour Prawn Soup Recipe (Tom Yaan Goong)

Ingredients

Ingredient to be pounded:
4 tbsp

Garnish:

medium prawns
straw mushrooms
cherry stone clams
fresh kha (siamese ginger), sliced
small red chili, sliced
small green chili, sliced
khaffir lime leaves, shredded
fish sauce
fresh lime juice
lemon grass, cut into 25mm lengths
vegetable oil
water


chopped coriander root
pepper corns
garlic

freshly shredded coriander leaves

Method:

  1. Shell and de-vein prawns, leaving the tails intact. Retain the heads and shells.

  2. Heat oil in a saucepan, add prawn heads and shells and stir-fry on HIGH 5 minutes. Then add water and bring to boil on HIGH 12 to 15 minutes. Drain and let soup continue to boil.

  3. Place garlic, coriander roots and pepper corns in a mortar and pound into a smooth paste.

  4. Stir the spice paste into soup, add lemon grass, ginger, lime leaves, prawns, clams and let soup boil on HIGH 5 minutes.

  5. Add fish sauce. lime juice, chili and straw mushrooms, and continue to boil for another 3 minutes.

  6. When soup is ready, garnish with fresh coriander leaves.

Serve 4
