Ingredients

Spices to be pounded:

1/2 tsp
cabbage, cut into bite-size pieces
fresh beans, cut into 4 sections
turnips, cut into 4 cm x 2 cm strips
coconut, grated. Add enough water to squeeze for 850 ml milk
oil
galangal
dried prawns, soaked to soften then pounded
small prawns, shelled and de-veined
firm soy bean cakes (taukwa), cut into triangles
salt to taste

candlenuts
shallots
garlic
pound dried chili
ground turmeric
ground coriander
belacan

Method:

  1. Put oil into a large bowl. Cook on HIGH 1 minutes. Add galangal and dried prawns. Cook on High 1 minutes.

  2. Add in ground spices. Stir well. Cook on HIGH 3 minutes stirring once.

  3. Add coconut milk and cook on HIGH 5 minutes to boil. Add all other ingredients, cover and cook on HIGH 8 minutes until vegetables are tender. Season to taste. Leave to stand for 5 minutes before serving.

Serves 4
