Spicy Barbecued Chicken Recipe

Ingredients

Spice to be pound:

fresh chicken about 1.5 kg, cut into 4 pieces
lime juice
oil
lemon grass bulb, bruised
a handful of fresh basil
pandan leaves, cut into 6 cm lengths
sweet soy sauce
Assam paste, mixed with 125 ml water
tomatoes, peeled and chopped
sugar
salt to taste

red chilies
shallots
fresh ginger
garlic
turmeric powder

Method:

  1. Spoon the lime juice over the chicken pieces. Set aside.

  2. Put oil in a rectangle dish large enough to hold the chicken pieces. Cook on HIGH 1 minutes. Stir in the rempah paste and cook on HIGH 2 minutes. Stir in rempah paste and cook on HIGH 2 minutes, stirring twice.

  3. Add lemon grass, pandan leaves, basil, soy sauce and tomatoes. Squeeze Assam liquid over rempah. Cover with cling film and cook on HIGH 3 minutes. Add in chicken, sugar and salt.

  4. Preheat oven and cook on combination temperature 180C 8 to 10 minutes. Leave chicken to marinate in sauce for 4 hours, overnight if possible.

  5. Before serving, preheat oven and cook on combination temperature 200C 8 to 10 minutes till chicken pieces are lightly brown.

Serves 4
