Stewed Eggplant with Minced Pork Recipe

Ingredients:

2 / 360 g
120 g

Seasoning:
1 tbsp
1 tsp
1 tsp
1 tsp
1 tsp

Marinade:
1 tsp
1/2 tsp
1/2 tsp

 

Sauce:
1 tbsp
1/2 tsp
1/2 tsp
1/2 tsp
1/2 cup


 

eggplants
minced pork


chopped shallot
grated ginger
chopped garlic
chopped red chili
lemon juice


oyster sauce
light soya sauce
sugar
a dash of sesame oil
a pinch of pepper

superior broth
a dash of sesame oil
a pinch of pepper
 

Method:

  1. Marinated minced pork with marinade for 15 minutes.

  2. Rinse eggplants. Chop into 1/2 inch thick. Add eggplants in some water with lemon juice. Microwave on HIGH (100%) for 1-2 minutes. Remove and drain well.

  3. Mix 1 tbsp oil, chopped shallot, grated ginger, red chili and minced pork in a casserole. Cover and microwave on HIGH (100%) for 1-2 minutes. Stir in sauce. Cover and microwave on MED HIGH (70%) 1-2 minutes till boiled. Pour over eggplant. Serve.
