Szechuan-Style Prawns Recipe

Ingredients

Sauce:
5 cloves
2 tbsp
3 tbsp
3 tbsp
2 tbsp
1/2 tsp
1 tbsp

Garnish:
1 stalk

king prawns, shelled and de-veined, retaining head and tail. make a cut in the centre of body. Twist tail through so that tail is pointing upwards.
oil
corn flour
chicken stock


garlic, finely chopped
ginger, finely chopped
celery, finely chopped
shanghainese-style chili sauce
tomato sauce
sesame oil
vinegar


spring onion, finely chopped

Method:

  1. Preheat oven to 190C. Put oil in deep dish. Cook on HIGH 1 minute. Add prawns, stir and cook on combination 3 minutes, stirring twice. Set aside.

  2. Blend the corn flour with the stock in a measuring jug. Put all the sauce ingredients in and stir well. Cook on HIGH 3 to 4 minutes, stirring twice. Adjust seasoning.

  3. Arrange prawns in a deep dish. Pour sauce over the prawns. Cook on combination temperature 190C 4 minutes. Allow to stand for 1 minute before serving.

  4. Garnish with spring onion.

Serves 4
