Ingredients

green beans, trim and cut into 2 cm
lengths.
carrots, cut at angle into 1 cm thick slices
turnips, cut into 1 cm wedges
broccoli florets
oyster mushrooms
spring onion, cut into 2 cm pieces
eggs
sesame oil
hot vegetable stock
wine vinegar
honey
light soy sauce
arrowroot flour

Method:

Separate the broccoli tops into small florets. Don't
use the thick stem. Trim mushrooms and cut into 1 cm thick slices.

Around the edge of a 26 cm serving platter with a 3
cm deep rim, alternate groups of carrots, green beans and turnips.
Make a ring of broccoli florets just inside the outer ring. Scatter
mushrooms and scallions over all.

Mix sauce ingredients together. Pour over
vegetables, cover with cling film and cook on HIGH 5 minutes. Remove
from oven, remove cling film.

Break each egg in turn into a cup and carefully
slide on to vegetables where first and second rings meet. Pierce egg
yolks with pin. Cover dish with cling film. Cook on HIGH 2 to 3
minutes until egg yolks are just cooked. Uncover and serve.
