Fried Squid in Hot Sauce Recipe

Ingredients
600 g

Seasoning:
2 tbsp
1/2 tsp
2 tsp
1/4 tsp
1 tbsp
1 tbsp

Garnish:
2 stalk
2 stalks

fresh squid, de-skinned, cut open and cut criss-cross pattern, then cut 2x4 cm pieces.
shallots, thinly sliced
garlic, thinly sliced
chili padi, roughly chopped
oil


fish soy sauce (Nam Pla)
salt
sugar
pepper
rice wine
oyster sauce


coriander leaves
spring onion, cut into 2 cm lengths

Method:

  1. Put seasoning ingredients into a bowl. Cook on HIGH 2 minutes, stir and put sauce aside.

  2. Put oil in a medium size dish. Cook on HIGH 2 minutes. It can be done in a browning dish. Add shallots, garlic and chili. Stir and add in sauce. Cook on HIGH 2 to 3 minutes, till squid is just cooked.

  3. Add squid, stir, cook on HIGH 3 minutes. Stir and add in sauce. Cook on HIGH 2 to 3 minutes, till squid is just cooked.

  4. Garnish with coriander leaves and spring onions before serving.

Serve 4
