Grilled Pandan Chicken Recipe

Ingredients

Spices:
1 clove

Garnish:
3 tbsp
3 tbsp
1 tsp
2 tbsp
1/2 tsp
2 tsp

Chicken meat, skinned and de-boned, cut into 2x4cm pieces
coconut, grated and squeezed for 100 ml milk
pandan leaves


garlic
shallots
piece fresh ginger
lemon grass
coriander leaves
red chili


dark soy sauce
gula melaka (palm sugar or soft brown sugar)
salt
ground coriander
pepper
corn flour

Method:

  1. Put coconut milk and spices and grind to a pulp. Mix with the above seasonings. Cook on HIGH 3 minutes. Leave sauce to cool.

  2. Marinate the chicken pieces with sauce for 2 hours, better overnight.

  3. Put pandan leaves on a plate, cover with cling film and cook on HIGH 2 minutes to soften leaves. Remove.

  4. Put 2 to 3 pieces of chicken for each pandan left, wrap tightly. Arrange on a round dish. Preheat oven and cook on combination temperature 190C 15 minutes.

Serve 4
