Assam Fish Nyonya Recipe

Nyonya Dishes

 


Ingredients:

600  g

2 cm
1 tbsp

fish (stingray or ikan pari)
piece fresh turmeric, pounded
piece fresh ginger
oil
medium bombay onions, quartered
chili paste
serai, lightly smashed
chili padi, lightly smashed
tamarind juice
belacan, roasted and dissolved in tamarind juice
daun kesum
fish gravy
pineapple, sliced
bunga kantan, sliced finely
salt to taste

Method:

  1. Wash fish and drain. Rub fish with pounded turmeric and ginger (to remove fishy smell).

  2. Heat oil in a clay pot, add onions, chili paste, serai, chili padi and fish. Stir gently, cover and cook for three minutes.

  3. Stir well, add combined belacan and tamarind juice, daun kesum, fish gravy and pineapple slices.

  4. Simmer for 10 to 12 minutes, add bunga kantan and salt. Serve hot with rice.
