Buah Melaka Nyonya Recipe
Nyonya Kuih

 


Ingredients A:

45 g
60 g
1 tsp
6
3/4 tsp



Filling:
35 g

To coat:
1/4

1/2 tbsp

pulut flour
sweet potatoes, steamed and mashed
sugar
thick pandan juice
A few drops green coloring



gula melaka, grated finely


grated coconut (white part) mixed with a pinch of salt
and steamed for 3 minutes.
sesame seeds (toasted) for decoration.

Method:

  1. Mix Ingredients A and knead into a smooth soft dough.

  2. Form small balls with the dough. Flatten it thinly and fill with gula melaka and seal it carefully.

  3. Put into half a pot of boiling water and boil till it floats. Dish and drain. Coat the balls with grated coconut.

  4. Serve in a small pandan basket if desired. Sprinkle with sesame seeds.

Makes 16

Note :

  1. Flatten dough as thin as possible to ensure buah melaka is soft even after a few hours.

  2. When it floats, let it cook for one minute or so that gula melaka will turn syrupy.

  3. Water content depends on flour.

  4. After sealing each ball, plunge into boiling water immediately or dough will be very soft.
