Chicken with Preserved Shrimps Nyonya Recipe
(Ayam Cencaluk)

Ingredients:

Finely ground paste:

cooking oil
shallots, peeled and sliced
cloves garlic, peeled and sliced
chicken breast, cut into pieces
preserved shrimps (cencaluk), juice drained
kaffir lime leaves
tamarind juice, extracted from 100 g tamarind pulp and
water
sugar
red chilies, halved lengthways, seeded and cut into three pieces
green chilies, halved lengthways, seeded and cut into three pieces


shallots, peeled
fresh turmeric, peeled
stalk lemon grass, sliced

Method:

  1. Heat the cooking oil and sauté shallots and garlic until crisp. Drain and sat aside.

  2. In the same oil, fry the finely ground paste until aromatic. Add the chicken, preserved shrimps and lime leaves.

  3. Add the tamarind juice. Season with sugar. Cook until the gravy thickens.

  4. Stir in chilies and half of the crisp-fried shallots and garlic

  5. Garnish with the remaining crisp-fried shallots and garlic just before serving.
