Ingredients:

duck, cut into large pieces
salted vegetables
rice wine
ginger
tomatoes
water
pepper

Directions:
-
Soak salted vegetables in water
for 1 hour. Drain and cut into large pieces.

Rub rice wine over duck. Leave to
season for 15 minutes.

Bring water to boil. Add duck,
salted vegetables and ginger.

Boil rapidly for 10 minutes.
Lower heat and simmer till duck is tender, about
1 hr.

During last 10 minutes of
simmering, add tomatoes.
-
Dish out into soup bowl. Add
pepper and serve hot.
