Method:

To make the batter, put Ingredients A into a bowl.
Make a well in the centre, add egg and mix. add pandan juice
gradually and leave to stand for 1/2 hour.

For filling, dissolve the 2 types of sugar with
water. cook till slightly syrupy. Add salt, pandan leaves and
coconut. Mix thoroughly.

Cook over low heat for 5 minutes. Add mixture for
thickening and cook for another 2 minutes. filling must be moist.

To make the pancake, heat a 15 cm non-stick frying
pan. Pour one scoop of batter and swirl it quickly to distribute
batter evenly. Make it as thin as possible. Cook on medium heat.

Lift when set. Put 2 tbsp filling on top of pancake,
roll and fold in the sides.

Serve attractively, with coconut crème if desired.

Note : Kuih Dadar tastes better if the
pancake is thin. |
