This is a traditional Straits Chinese soup served at weddings.


Ingredients:

300 g/ 1/2 kt
300 g/ 1/2 kt
1.2 kg/ 2 kt
50 g/ 2 oz

Soup:
300 g/ 1/2 kt
2.31 liters/ 80 oz
1/2 tsp
2 tsp
2 tsp

minced pork
scraped or minced fish meat
crabs, use meat only or 200 g/ 1/2 lb meat
cooked bamboo shoots, finely shredded
garlic, fried golden brown
egg
monosodium glutamate
salt
light soy sauce
oil

Directions:

  1. Soup : Heat a frying pan until hot, add in 3 tbsp oil, and stir-fry the garlic over a low fire until slightly brown. Remove and add to meatball mixture. Fry the  (soup) bamboo shoots for about 2 minutes, remove and set aside. Add in 2.31 liters water, 1/2 tsp sugar, 2 tsp salt and 2 tsp monosodium glutamate for the soup.

  2. Meatballs: Mix the pork and fish together, add the 1 tsp monosodium glutamate, 1 tsp salt, 1 tsp light soy sauce and fried garlic, bamboo shoots, egg and then the crab meat. Mix well and then form into balls. Drop the meatballs in the boiling soup.

  3. Add the soup bamboo shoots to the soup, simmer for 10 minutes, and serve in a large soup bowl.
