Fish or prawns prepared in a tamarind gravy.


Ingredients:

0.6 kg/ 1 kt
2 rounded tbsp

3/4 tbsp
2 tbsp
1 tbsp

rempah (pound):
10 slices
1/2 thumbsize piece

add in & pound coarsely:

fish or prawns
tamarind (assam), add 855 ml/ 30 oz water, strain & use liquid only
tamarind (assam) fruits
salt
sugar
lard or oil


lengkuas
tumeric (kunyit)


shallots (bawang merah)
fresh chilies
shrimp paste (blachan)

 

Directions:

  1. To Cook : Combined the rempah, tamarind water, tamarind fruit, 2 tbsp sugar, and 3/4 tbsp salt. Bring to boil, add in the fish or prawns and the oil. Simmer until the meat is cooked.

Note : Cuttlefish or crabs may also be used.
