Ondeh-Ondeh, a green glutinous rice cakes nyonya kuih for Straits-born Chinese Wedding Specialty

pandan leaves (matured leaves)
green coloring
glutinous rice flour
tapica flour
pinch of salt
brown sugar
roasted sesame seeds
white grated coconut

Method
-
Shred
finely pandan leaves and pound until a soft pulp is obtained. Scoop
onto voile or muslin and squeeze out green pandan juice. Supplement
with green coloring.

Mix
thoroughly glutinous rice flour, tapioca flour, pinch of salt and
pandan juice. Knead until an even color distribution is obtained.
Add a little water if necessary.

Take
a marble-sized dough, flatten it to a diameter of 5 cm (2 ins). Fill
1 tbsp brown sugar in the centre and roll dough into a ball. Repeat
until all green dough and brown sugar are used up.

Boil
a pot of water and when boiling, put in green marbles, one at a time
until they float up. Use wire sieve to scoop out. Shake a little to
get rid of excess water.

Roll
cooked green marbles into a mixture of sesame seeds and grated
coconut. They will be coated with white and beige flakes.
