Sambal blimbing Recipe

Ingredients:

blimbing, ends discarded & sliced
small prawns, peeled
shallots, (bawang merah) sliced
garlic, sliced
lemon grass (serai), sliced
coconut, grated, add 8 tbsp water, squeeze for milk, discard pulp
salt
sugar
oil


candlenuts (buah keras)
shallots (bawang merah)
red chili
shrimp paste (blachan)

 

Directions:

  1. Heat a frying pan until very hot, add 5 tbsp oil and then stir-fry the shallots, garlic and serai until golden brown, remove. Stir-fry in the rempah, add a little coconut milk, and then add the prawns and blimbing. Stir-fry for a few minutes before adding in the remaining coconut milk, 2 tsp salt and 4 tsp sugar. Simmer until cooked, remove and place on a seving dish and garnish with the fried shallots, garlic and serai.
