Directions:
Heat a
frying pan until very hot, add 5 tbsp oil and
then stir-fry
the shallots, garlic and serai until golden
brown, remove. Stir-fry in the rempah, add a
little coconut milk, and then add the prawns and
blimbing. Stir-fry for a few minutes before
adding in the remaining coconut milk, 2 tsp salt
and 4 tsp sugar. Simmer until cooked, remove and
place on a seving dish and garnish with the
fried shallots, garlic and serai.
