Stewed Mushrooms and Chestnuts Recipe

Ingredients

Garnish:
225 g/1/2 lb

dried mushrooms
water
dried chestnuts
fresh ginger
groundnut oil
light soya sauce
sugar
sesame oil
chai sim, por chai,etc. (any greens)
dash of pepper

Method:

Prepare dried mushrooms in 570 ml boiling water.
Strain water and save.

Prepare chestnuts.

pound fresh ginger into a fine pulp, then squeeze
out 1 tbsp of juice.

Heat oil over high fire, fry mushrooms and
chestnuts. Add light soya sauce, sugar, ginger juice and sesame oil.

Add mushroom water, lower fire and allow to simmer
for 1 hour until the mushrooms and chestnuts have soaked up all the
water. Add more water if necessary.

Prepare garnish by blanching the chosen greens and
place them around main dish. Sprinkle with pepper and serve.
