Combine garlic
, ginger, sugar, soy sauce, sherry, five-spice mixture and rub meat
with this mixture and then salt. Leave for 12 hours, turning and
basting often.
Put in a greased roasting pan or on a
rack in a shallow roasting pan. Roast in a 175C oven, basting with
the marinade frequently.
Cut into individual ribs.
Notes:
The ribs may be cut before marinating, for greater crispness.
