Chinese Soya Sauce Marinade for Barbecued Spare Ribs Recipe

Ingredients

FOR 1 KILOGRAM SPARE RIBS
2 clove
1 tbsp
1 tbsp
3 tbsp
1 tbsp
11/2 tbsp
1/2 tsp
 


garlic, crushed
crushed ginger
sugar
light soy sauce
dry sherry
five-spice mixture
salt
 

Method:

  1. Combine garlic , ginger, sugar, soy sauce, sherry, five-spice mixture and rub meat with this mixture and then salt. Leave for 12 hours, turning and basting often.

  2. Put in a greased roasting pan or on a rack in a shallow roasting pan. Roast in a 175C oven, basting with the marinade frequently.

  3. Cut into individual ribs.

Notes:
The ribs may be cut before marinating, for greater crispness.
