Japanese Soy Sauce Marinade for Chicken Yakitori Recipe

Ingredients

For the Yakitori sauce:
150 ml
90 g
25 ml/5 tsp
15 ml/1 tbsp

boneless chicken thighs, cut into chunks
bunch of spring onions, cut into short batons
Japanese seven spice powder, to serve

soy sauce
caster sugar
sake
plain flour

Method:

  1. Place the soy sauce, sake and flour in a small pan and stir well. Bring to the boil, stirring all the time, then reduce the heat and simmer for 10 minutes, until the sauce in reduced by a third. Set aside.

  2. Tread the chicken and spring onion pieces alternately on to 12 bamboo skewers. Grill for 5-10 minutes until the chicken is cooked, brushing generously with the sauce once or twice during choking.

  3. Sprinkle the kebab with Japanese seven spice powder and serve at once, with a little extra yakitori sauce, if you like.
