Sweet and Hot Apricot Chutney Recipe

Ingredients

2 tbsp
500 g/1 lb
200 g/7 oz
5 tbsp

65 g/2 1/2 oz
1 tsp

oil
onion, chopped
ripe apricots, chopped
chicken stock
red chilies
salt & pepper
apple vinegar
sugar
ground coriander

Method:

  1. Heat oil in a large shallow pan and fry chopped onion over a low heat for 10 minutes. Add chopped ripe apricots & chicken stock.

  2. Finely chop 2 red chilies and add to the onions, together with salt, pepper, apple vinegar, sugar and ground coriander.

  3. Cook, uncovered, over a very low heat for about 1 hour, stirring repeatedly.
